Apart from its traditional delicacies, Bengal finds inspiration from outside, adding a distinct charm to its food. The refined Avadhi cuisine of the Nawab of Oudh found a permanent place in Calcutta after the arrival of Wajid Ali Shah in the mid-1800’s. The Chinese community brought their own flavours, leading to a new ‘Indian Chinese’ cuisine which is among the most popular street food all over the country. The Portuguese, Dutch, English, Jews and Armenians introduced their own techniques and preparations.

On this tour:
• Visit food markets for an introduction to the various spices and ingredients that are used in this part of the country – a bustling fish market, a meat and vegetable market, and a spice market and get lost in its activity, observing local life.
• Proceed to a family-run restaurant that serves “thala” – a multi-course platter comprising a full Bengali traditional meal, which draws inspiration from rivers and green paddy fields, and is an elaborate affair.
• Savour rice, Bengal’s staple dish; alongside several delicious accompaniments; the highlight of which are freshwater fish preparations, and of course, Bengal’s famous milk-based desserts.
• Taste the sophistication to traditional Bengali cuisine which is a result of the use of multiple cooking techniques, with unique spice combinations.

WHAT TO WEAR: Please dress modestly and ensure you have adequate sun protection. Wear comfortable walking shoes.

TOUR NOTES: Please note, the food on the street is delicious but does not meet national or international hygiene standards. Although we only go to very popular places, with good local reputations, these stalls do not cook using bottled water or wash their utensils with it. So eating street food is always risky. If you prefer not to risk it, but still want to see what it’s all about, then at the end of the walk, we can take you to Haldirams where you can try chaats and other popular dishes in safe and hygienic conditions.
